A few weeks ago Kris decided to make his traditional zapiekanka recipe for dinner and I shared a snippet of it on Instagram.
I got a lot of questions from people asking what zapiekanka is and mentioning it looked really good.
Since Kris absolutely loves eating zapiekanka and it’s quite easy to make, we decided to share a zapiekanka recipe!
For those of you who don’t know, Kris was born in Poland. While he moved to the U.S. when he was young, Polish friends, family and food were his surroundings.
When we lived in Chicago we had easier access to Polish food, but now that we’re in Miami, Kris craves it even more. Luckily, he knows easy Polish recipes to make more often.
One of the easiest recipes is a zapiekanka and it can be made to your taste!
If you’ve read this far and are wondering what in the world is zapiekanka, it’s pretty much an open-faced sandwich.
However, it has mushrooms and you can top it with whatever you want, including pickles and Polish ketchup which is delicious!
When we visited Poland 3 years ago, we had a zapiekanka so I can attest to Kris’ recipe being legit (not that I had any doubts).
It’s simple to make and you can find all of the ingredients pretty much anywhere. I’ve linked some of them below!
Below we’re sharing the most common zapiekanka recipe Kris makes. While it’s delicious, I will warn you it can be a bit messy.
As an alternative, feel free to follow the same recipe but don’t top it with tomatoes, pickles, or corn – it’s all up to you!

- 10 slices French bread cut in 4 inches
- 20 ounces white mushrooms
- 2 small yellow onions
- 2 tbsp butter
- 1 tsp Vegeta seasoning
- 1/2 tsp pepper
- 10 slices gouda cheese
- mayonnaise just enough for the corn to stick to it
- corn as much as you'd like per slice
- tomato slices as many as you'd like per slice
- pickles as many as you'd like per slice
- ketchup ideally Polish ketchup
- chives sprinkle to taste

- Start by washing the mushrooms on a strainer.
- Grate the mushrooms and onion and place in a bowl.
- Preheat oven to 400 F.
- Melt the butter in a large pan. Add the mushrooms and onion and cook for about 2-3 minutes, then season it with Vegeta and pepper. Cook until it's soft and most of the water has evaporated, about 10-15 minutes.
- Cut the bread to 4-inches in length and slice in half. Spread butter to taste and add roughly 2 tbsp per mushroom mix on each bread slice. Top with cheese and place in oven for 5-10 minutes or until the cheese starts to brown in corners.
- Spread mayo on each slice to taste and top with corn. Place tomato and cucumber slices on top and add ketchup to taste. Top with chives.
