Thanksgiving is a week away and while it’s a really wonderful time, it can also be stressful to figure out all the food. After all, it’s definitely a day where most of us feast. While I’ll be the first to admit I have no idea how to make a turkey, the side dishes are more up my alley. Even more are the desserts but I wanted to try something a bit different this time. Since Kris is more of the cook while I am more of the baker, I decided to recruit his help this time. We both love potatoes (who doesn’t?) so we decided to create two Thanksgiving side dish recipes with potatoes.
I may be biased but both of these recipes are absolutely delicious. Mashed potatoes are a traditional Thanksgiving side dish so you cannot go wrong with it. And roasted potatoes are so tasty that everyone will be begging for more. After all, who doesn’t get seconds and thirds during Thanksgiving?
The best part about these recipes, in my opinion, is that they are so easy and quick to make. Thanksgiving usually involves quite a bit of cooking which means lots of time spent in the kitchen. The more we can reduce overall cooking time the better. So, delicious and easy to make! Seems like a win-win to me?
Enough talk about Thanksgiving side dish recipes, let’s actually get on to the recipe part, shall we?
Easy Mashed Potatoes
First up are the easy and delicious mashed potatoes. They have minimal ingredients and it’s all relatively healthy. If you’re vegan, just replace the greek yogurt for a dairy-free yogurt.

- 1.5 lbs yellow potatoes
- fresh dill to taste
- 3 tbsp greek yogurt
- salt to taste
Ingredients

- Peel all potatoes. Wash them and cut in half.
- Add water until potatoes are covered.
- Add salt to taste and place on stove on high heat.
- While you wait for the potatoes to boil, remove dill stems and finely chop it.
- Once potatoes have boiled and feel tender with a fork, drain the water.
- Add the dill, greek yogurt and use a potato masher to mash potatoes.
- Serve and enjoy!
Roasted Small Potatoes
These are crunchy and delicious. I personally love ketchup so I ate them with a bit of Sir Kensington’s ketchup, but they’re just as good on their own. Also, you can swap onion powder for garlic salt. Totally up to you!

- 1 bag medley potatoes
- 1 tsp dried cilantro
- 1 tsp dried parsley
- 1/2 tsp onion powder
- 1/2 tsp season salt
- 2 tbsp olive oil
Ingredients

- Wash potatoes
- Cut in half and place in a bowl.
- Add potatoes to a small pot and fill with water until they're covered.
- Place on stove on high heat and cover.
- While you wait for potatoes to boil, in a mixing bowl add the olive oil, dried parsley, dried cilantro, onion powder and season salt. Mix well.
- Preheat oven to 425F and line a baking sheet with aluminum foil.
- Once potatoes boil for about 15 minutes, drain water. Place them in the mixing bowl and mix with all spices.
- Spread evenly on lined pan and bake for 20 minutes.
