Whether you follow me on Instagram or have seen my recent posts about pumpkin chocolate chip cookies and the 10 must-try healthy pumpkin recipes, you probably know I’m obsessed with pumpkin. Fall is my favorite season and pumpkin just screams Fall to me. That’s why every Fall I try to play around with as many Fall recipes I can, both my own and other people’s recipes. I’m by no means a pro in the cooking department so I usually play it easy to avoid wasting food if I don’t like something. Usually I just adapt a recipe I am familiar with to include pumpkin and play around with the ingredients until it’s just perfect. I’m highly familiar with overnight oats since they’re one of my favorite breakfast and snack options, however I hadn’t made healthy pumpkin overnight oats until now.
Let me tell you, these healthy pumpkin overnight oats are delicious! They’re the perfect morning snack or breakfast and I love just how easy to make they are. I’m a huge fan of meal prep and easy to make recipes, and this one checks both boxes. It’ll definitely be on repeat for the next few months, especially since Miami doesn’t feel like Fall so I gotta make it happen through food!

- 3/4 cups almond milk
- 2/3 cups rolled oats
- 1/4 cup pumpkin puree
- 2 tsp maple syrup
- 2 tbsp chia seeds
- 1/4 tsp pumpkin pie spice
- 1 banana as topping
Ingredients

- Combine all ingredients except the banana in a bowl and mix well.
- Pour mix into two containers and refrigerate overnight.
- Top with 1/2 fresh banana before eating.
