I’m still going strong on my December intentions to bake all the holiday treats! Thus, I decided to test out a recipe with peppermint because it doesn’t get more Christmas than that. I love brownies, especially á la mode with vanilla ice cream (anyone hungry yet?). However, I wanted to make these delicious and nutritious. That’s why I modified a Tone It Up protein brownie recipe to make it perfect for the holidays. And that’s how the peppermint chocolate chip protein brownies recipe was born.
I know what you may be thinking once you read the ingredients. Avocado? In a brownie? Yes, believe me you won’t taste it. Rather, it’ll help give the brownies their gooey consistency. I’m telling you, avocados are the best thing that happened to us! Also, be mindful that peppermint is quite strong so if you don’t like it that much, feel free to skip out on the crushed peppermint candy canes to top the brownies. Quite frankly, I used them mostly to make them look more Christmas-y (I know it’s not a word) but you are welcome to leave them out. Also, I used Lily’s unsweetened dark chocolate chips but you can also use Hu Kitchen gems. Anyway, let’s get to the recipe shall we?

- 2 avocados mashed
- 2 tbsp melted coconut oil
- 2 eggs
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 1/4 cup chocolate protein I use Tone It Up
- 1/2 cup almond flour
- 1/4 cup unsweetened cacao powder
- 1/2 tsp baking powder
- 1/4 tsp Himalayan sea salt
- 1 tsp peppermint extract
- 1 candy cane crushed, for topping
Ingredients

- Preheat oven to 350F and grease a 9x9in square pan or line a 12x9in pan with parchment paper for cutout brownies.
- In a mixing stand combine all ingredients.
- Spread evenly on pan and top with a crushed peppermint candy cane if desired.
- Bake for 35 minutes or until a toothpick comes clean.
- Cut into squares or use a cookie cutter mold for Christmas-shaped brownies.
