If you follow me on Instagram you know I love eating salads. My husband, however, not so much.
In order to avoid buying lots of different grocery items, we try to find ingredients we both love that we can use in different ways.
As far as greens go, Kris pretty much will only eat cucumbers, green peppers, and the lettuce in his burger (sorry babe!).
Luckily, I’m a fan of pretty much all greens so finding a recipe that works with those is easy.
Kris has always been a fan of cucumber salads, especially one he had at True Food Kitchen a while ago.
Since we don’t have a TFK nearby (we can’t wait til they open in Miami), we decided to make our own version of the cucumber salad.
I will admit, I’m not the biggest fan of the kitchen (I do love baking though) so Kris pretty much adapted the recipe on his own.
That’s also what sparked the idea behind the “In the Kitchen with Kris” series, because believe me, there will be more recipes!
With the 4th of July coming up and just the overall heat of the summer, we thought a refreshing cucumber salad was the perfect recipe to start with.

- 2 large cucumbers
- 1/2 large tomato
- 1/2 red onion
- 3 tbsp fresh dill
- 1 tbsp salt
- 2 1/2 tbsp white wine vinegar
- pepper to taste
Ingredients

- Start by thinly slicing the cucumbers and place in a strainer. Add the salt, mix and let sit for 12-15 minutes.
- While the cucumbers sit, thinly slice the tomato, red onion, and chop the dill.
- After 12-15 minutes, wash the cucumbers so the excess salt is gone.
- Mix the cucumber, tomato, onion, and dill in a bowl. Add the white wine vinegar and pepper to taste.
