Ever since I was a kid I used to drink hot chocolate when the weather got chilly. Growing up in Colombia, this meant I only drank hot chocolate when we spent time at my family’s farm which was a lot cooler temperature-wise than where I’m from. However, I enjoyed every sip! Now the weird part (to some, to us Colombians it’s totally normal) is that we top it off with cheese. No, not your average cheese. We add what is known in the US as Colombian Quesito (Colombian cheese). Anyway, the hot chocolate was made fresh with hot chocolate bars that are pretty natural and relatively low in sugar. However, when I tried hot chocolate in the US I thought it was way too sweet. That’s why I decided to try a healthy hot chocolate recipe instead. It honestly tastes really good, is perfect for a Hallmark movie night, and will leave you satisfied.
I didn’t include the cheese for this recipe because I am aware how strange it may sound but if you feel like giving it a shot, go for it. If you live in an area where it’s hard to find Colombian Quesito or Mexican Fresh Cheese (they’re pretty similar), try a mozzarella ball. It won’t be the same thing but again, this is only if you feel like trying it. I personally like to think of fondue; everything goes well with cheese or chocolate so why not put them together? For the record, we only add a few bite-sized pieces, not a ton of cheese. Anyway, enough cheese talk. Let’s go over the healthy hot chocolate recipe.

- 1 cup unsweetened almond milk
- 1 tbsp cacao powder
- 1/2 tbsp maple syrup
- 1/2 tsp vanilla
- pinch sea salt
- pinch cinnamon
Ingredients

- Add all ingredients to a small pan and mix well before turning on the stove.
- Set the stove on low-medium heat and warm up the mix, stirring occasionally.
- Serve and enjoy!
