I’ve been on an egg kick lately and we had a ton of tortillas at home so I’ve been trying out different ways to combine all ingredients. After, all I cannot stand food going to waste. One of my favorite things about eggs is how versatile they are. You can use them when baking or you can eat them as a meal. Eggs can be cooked scrambled, sunny side up, poached, boiled, and so much more. The possibilities are pretty much endless! So what about a super easy and delicious crunchy egg wrap? Yup, that’s a thing too!
I’m not the biggest fan of spending lots of time in the kitchen. First of all, I’m hungry and second of all, who has the time? I’m always looking for ways to make food easy, delicious, and convenient and I’m glad to say this super easy and delicious crunchy egg wrap makes the cut. You’ll be done in literally minutes and will be able to enjoy a wonderful meal that you can have on-the-go or at home.

- 2 eggs
- 3 white mushrooms sliced
- 1 slice turkey cut into squares
- dried basil to taste
- dried oregano to taste
- everything but the bagel seasoning to taste
- 1 tortilla
- sun-dried tomato paste to taste
Ingredients

- add eggs, sliced mushrooms, turkey slice, and seasonings (to taste) in a bowl and whisk well.
- add a bit of avocado oil to a pan and once it heats up, add the egg mix.
- allow it to start cooking until the edges are almost ready but the center is not yet fully cooked.
- add sun-dried tomato paste to one side of the tortilla, just enough to cover the tortilla.
- place tortilla over egg mix and flip after about 30-45 seconds.
- cook for about 20 seconds until the tortilla starts browning and take out of pan and place on a plate.
- fold the tortilla into a wrap and cut in half. enjoy!
