It’s still pumpkin season and that’s the perfect excuse to continue testing pumpkin recipes. Fall is my favorite season and I just love the taste and smell of pumpkins. Whether it’s pumpkin chocolate chip cookies or pumpkin overnight oats, I’ve been eating pumpkin at least once a day (no complaints about that!). I’m also a big fan of parfaits. They’re so easy to make and the perfect snack. It occurred to me, why not create a pumpkin spice granola recipe to add to my parfaits? And so this blog post was born!
Granolas are more than parfait toppings though. You can snack on them on their own, top them on your smoothie bowls, or even add them to ice cream for a crunchy dessert. While this one leans a bit on the sweeter side, it’s still fairly healthy. Most importantly, it has all natural ingredients. Also worth noting, you can add additional toppings to this and get creative. Think dark chocolate chips, peanut butter chips, cashews, the list is endless! That’s one of my favorite parts of granolas, they’re so versatile.

- 3 cups rolled oats
- 1 cup chopped pecans
- 1/3 cup pepitas
- pinch Himalayan sea salt
- 1 tsp pumpkin pie spice
- pinch cinnamon
- 1/4 cup coconut oil melted
- 1/3 cup maple syrup
- 1/3 cup pumpkin puree
- coconut flakes to taste
Ingredients

- Preheat over to 325F and line a baking tray with parchment paper.
- Combine all wet ingredients in a small bowl and mix well.
- In a separate bowl, combine all dry ingredients and mix well.
- Add the wet ingredients to the dry ones and mix well.
- Spread the mixture evenly in the baking sheet. If you like chunkier pieces, make sure granola is close together.
- Bake for 15 minutes and stir. Place in the oven for another 15 minutes so it continues to bake.
- Take out of the oven, let it cool and add coconut flakes if you'd like. Enjoy!
