I remember like it was yesterday the day I realized how much I loved pumpkin. It’s all thanks to one of my best friends and college roommates who happens to be from the pumpkin capital of the world: Morton, IL. Thanks to her I got to experience the pumpkin festival and well… the rest is history in this pumpkin love story. But enough about that. You’re probably here because you want to check out the 10 must-try healthy pumpkin recipes for Fall.
Every year for Fall I fully commit to pumpkin season. I try to test and remake as many pumpkin recipes as possible. This year, however, I decided to share the must-try healthy pumpkin recipes because, well, you must try them! These are relatively easy-to-make recipes, and pretty healthy. Not to mention they’re incredibly delicious.
10 Must-Try Healthy Pumpkin Recipes
Dear Moscato’s Pumpkin Chocolate Chip Cookies: Obviously I had to share my own recipe here. I mean, not to toot my own horn but these pumpkin chocolate chip cookies are absolutely delicious, easy to make, and made with real, unprocessed ingredients. Need any more reasons to try them? Kris said they’re husband-approved. My case rests.
Once Upon a Pumpkin’s Healthy Pumpkin Smoothie Bowl: When your brand is all about pumpkin you know it’s gonna be good. I’ve been following Maggie on IG for quite some time and even have a copy of her cookbook. Let me tell you, she never disappoints! I know a smoothie bowl might not be the Fall recipe everyone envisions but I live in Miami and the temperature barely drops so smoothie bowls are served year-round.
Once Upon a Pumpkin’s Healthy No Bake Pumpkin Snickerdoodle Energy Bites: Like I said, every single one of Maggie’s recipes is delicious so I had to include more than one. I love these energy bites because they’re super easy to make and I love anything with cinnamon so it’s a win-win recipe. Plus, they’re healthy and give you energy. More like a win-win-win-win recipe!
Bake It Paleo’s Paleo Pumpkin Pancakes: I recently got a mini pumpkin waffle maker and love using it to make pumpkin pancakes. I don’t think it gets better than pumpkin-shaped pumpkin pancakes and this recipe is perfect for it. They’re so fluffy and yummy too!
Eating Bird Food’s Pumpkin Baked Oatmeal: Oatmeal’s one of those foods that works for any time of the day. Whether you’re having it as a meal or snacking on it, it’s delicious and healthy. Pro tip: you can also have it as dessert if you warm it up and top it with a scoop of ice cream. Genius, right?
Well Plated’s Vegan Pumpkin Bread: You know how the quarantine bake was banana bread? Well the Fall bake is always pumpkin bread. It’s simply a must and this pumpkin bread recipe is delicious. Not to mention easy to make and vegan, so it’s very inclusive of dietary needs.
Erin Lives Whole’s Healthy Pumpkin Muffins: I love pumpkin muffins because they’re perfect for snacking. I can take them with me anywhere or snack on them at home. I love that these muffins have chocolate chip because it adds a touch of sweetness that totally satisfies any sweet cravings. Plus, I think pumpkin and chocolate go great together.
Simple Veganista Vegan Pumpkin Soup: Any time I think of Fall food I envision comfort food and that definitely includes soup. This soup recipe has minimal ingredients, is easy to make, and it’s delicious. It’s the perfect comfort meal for a chilly Fall day. Or a Miami Fall day I suppose works too. Either way, I highly recommend it.
Lavender and Macarons’ Mushroom and Pumpkin Risotto: Kris and I are big fans of mushroom risotto (our own recipe here) so this one’s a no brainer. It’s a delicious mushroom risotto with a Fall touch. Plus, we’re always so used to seeing mushroom in desserts or snacks that we forget we can have them for dinner too!
Picky Eater Blog’s Healthy Layered Pumpkin Brownies: It’s dessert time with these delicious pumpkin brownies. They’re soft and gooey, which is exactly how I like brownies. They’re perfect for when my sweet tooth kicks in and I want a healthier dessert
